Days 3 & 4: 10 Days in May Magic Bullet Muffin Buster

Woe is me! Life gets in the way of my best laid plans…

Today is Day 4 of Susan’s Last 10 Days in May Magic Bullet Muffin & Fat Back Buster UnDiet & Weight Release Thing, and  I completely missed blogging about Day 3 because I was too busy blogging about being blocked on Facebook (Trigger warning). So, here goes with Days 3 & 4 together now!

It’s STILL raining,  pouring in fact, and freezing cold. It’s been like this for… well, since we started this 10 Day Thing. The only thing to do about the weather is go with it. In #PINK of course.

Breakfast (Day 3)

I started Day 3 with a long walk. Despite having an umbrella (#PINK), a rain jacket (#PINK also – see above), and rain pants, I got absolutely drenched. When I got home, I needed something to warm me up. So I invented the Banana Split Hot Chocolate Smoothie.  It is to die for! (If I do say so myself :P)

Ingredients are (list of ingredients I bought for the week is here.):

Banana Split Hot Chocolate Smoothie

  •  2/3 cup soy milk (unsweetened)
  • 2/3 cup almond milk (unsweetened)
  •  1/2 of a small banana
  • 4 small squares 70% chocolate

Soften the chocolate in a small container in the microwave. When it’s soft add about a tablespoon of the almond milk and stir it around to make chocolate sauce. You may have to “nuke” it again, and stir again, to make the sauce smooth. Set aside. Combine the almond and soy milk and heat in a Magic Bullet cup until the milk is warm. Add the chocolate sauce, and banana, blend. A thick, rich,  relatively low-cal, chocolate lover’s dream!

Unlike Days 1 and 2, I drank the WHOLE thing. Honestly, it’s completely decadent.  It was a bit thick, so  next time I will try less banana and/or perhaps add some water to the milk.

Lunch (Day 3)

I had a quesadilla again for lunch, ’cause there was some leftover from yesterday.

Quick Quesadilla

  • 1/2 cup cheddar cheese (Cabot sharp cheddar is my favourite)
  • 1/3 cup cooked chicken
  • 3 to 4 cherry tomatoes (or one half regular sized tomato about 1/4 cup)
  • two flour or corn tortillas (I used corn)

Put all the ingredients except for the tortillas into the Magic Bullet tall cup and chop by pulsing until you achieve a blended, but chunky texture. Spread the mixture between the tortillas and put in the microwave on high for one to 1 1/2 minutes until fully heated.  Mine was very hot in one minute. The Bullet doesn’t chop as well as it blends and purees – more about that on the Day 2 post if you’re interested.

Supper (Day 3)

I bought some fresh asparagus at Joey LeBaron’s wonderful store in the heart of North Hatley, and made myself Amazing Asparagus soup for supper.

Amazing Asparagus Soup

  • About 10 asparagus spears
  • 1 cup chicken stock
  • 1/2 clove garlic
  • 1/2 cup plain yogurt ( or milk, or cream, or almond milk)

Put the asparagus spears, chicken stock, and garlic in the Magic Bullet “big” cup. Heat in the microwave for two minutes, until the asparagus is soft. Add the yogurt; blend.

If you love asparagus, you will adore this soup. Like the Temptation Tomato Soup I “bulleted” on Day 1, the flavor of the  fresh produce makes it super delicious. It’s so fast and easy to make, which for me (a single person living alone with lots to do), is important.  I also love the gorgeous green colour.

The Magic Bullet calls for one clove of garlic for all the soups, but I found one clove makes it quite garlicky, so I reduced it. If  you are a garlic freak, add more!

 Day 4

I woke up early (05:30) and hungry this morning, so I had a whole grapefruit, and two pieces of pumpernickel toast with (high-calorie) coconut oil (instead of butter), and honey.

I scoffed the rest of my Strawberry Grapefruit Smoothie (from yesterday’s breakfast ) as a mid-morning snack, along with a half a handful of Roasted Honey Lemon Almonds.

I savoured the rest of yesterday’s Amazing Asparagus Soup for lunch –  everything was delicious. (I love leftovers :-))

For dinner tonight, I again plan on having soup. I think I will try cream of onion and mushroom.

There’s no recipe for it in the Magic Bullet cookbook, but I can easily create my own, just like I did with the Banana Split Hot Chocolate Smoothie (Really, it is SO yummy, you must try it).

Or maybe I’ll have Amazing Asparagus again, sometimes I like to stay IN the box rather than venturing out…

Important caveat: I am not a nutritionist, and this may or may not be a “healthy” regime for me or you or anyone else. It’s just a thing I’m doing for a short time for my own personal long-term well being.
